Zero Oil Detox Vegetable Soup
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 medium zucchini, diced
- 1 medium bell pepper (any color), diced
- 2 medium tomatoes, chopped
- 1 cups green beans, trimmed & chopped
- 2 cups fresh spinach or kale
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 5 cups low-sodium vegetable broth
- 1 cups water
- 1 teaspoons cumin powder
- 0.5 teaspoons turmeric powder
- 1 teaspoons Italian seasoning
- 0.5 teaspoons black pepper
- 0.8 teaspoons salt
- 1 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped (for garnish)

Sauté onion & garlic (no oil!): In a large pot over medium heat, dry sauté 1 medium onion, chopped with a splash of water or broth for 3–5 minutes 05:00
until translucent. Add 4 garlic cloves, minced and cook for 1 more minute.2
Bloom the spices & tomatoes: Add 1 teaspoons cumin powder, 0.5 teaspoons turmeric powder, 1 teaspoons Italian seasoning, and 0.5 teaspoons black pepper to the pot. Stir for 3m 30s 03:30
to bloom the spices. Add 2 medium tomatoes, chopped and cook for 3 minutes until they soften slightly.3
Add broth & hard veggies: Pour in 5 cups low-sodium vegetable broth and 1 cups water. Add 2 medium carrots, diced, 2 celery stalks, chopped, 1 medium zucchini, diced, 1 medium bell pepper (any color), diced, and 1 cups green beans, trimmed & chopped. Stir well, bring to a boil, then reduce heat to medium-low.4
Simmer: Cover and simmer for 20 minutes 20:00
until all vegetables are tender. Stir occasionally.5
Add greens & finish: Stir in 2 cups fresh spinach or kale and 0.8 teaspoons salt. Cook for 2 minutes 02:00
until greens are wilted. Remove from heat and stir in 1 tablespoons lemon juice for brightness.6
Serve & garnish: Ladle into deep bowls and garnish with fresh 2 tablespoons fresh parsley, chopped (for garnish). Serve hot and enjoy guilt-free!
